Avocados are full of healthy fats and they are one of my favorite FRUIT to add to a recipe (yes, they are a fruit). Whether it is avocado toast or guacamole you can’t go wrong with avocado. Check out these fun recipes to use those fruits full of fiber. The avocados will add a fresh flavor to all of your recipes, not just taco night. When choosing an avocado make sure to get a ripe one if you are using it the night of. If you plan to cut it up in a couple of days a firmer avocado will work just fine because it will have time to ripen on the counter.
