Low-Carb Recipes for Lunch on the Go
Are you busy and on the go all of the time and feel that it is difficult to find healthy options? Here are some ideas for you to use when you are looking for a low-carb option to grab and go.
Lettuce wraps
Lettuce wraps are a great option and you can make them to your fancy. The best type of lettuce to buy for lettuce wraps are Bib or Butter lettuce. From there you can use any “stuffing” that meets your fancy. The quickest and easiest recipe is to simply use your favorite deli meat, and sandwich fixings and use these in the lettuce wrap.
If you want to do a more exotic wrap the key is to prepare your stuffing ahead of time (which you can use first in a bowl or on a salad for dinner) and then use the leftovers for the lettuce wraps.

In addition to using lettuce as a wrap, which is option lowest in carbs, you can use other lower carb wrap options like egg wraps, coconut flour wraps, cauliflower flatbread, and cheese wraps.
Salads
Salads are a great go to for lunches on the go. Here are some tips:
You can chop your lettuce ahead of time and store this in the fridge to use throughout the week or you can simply use bagged salad mixes.
If you are eating lower-carb, you should avoid those extra toppings like tortilla or pita chips that typically are in the salad mixes.
You should also keep an eye on the salad dressings in salad mixes. Salad dressing can be pretty sneaky when it comes to carbs and fat grams. This can be dealt with by simply using your own salad dressing.
Assemble the lettuce and your toppings in a to go container and keep the dressing in a separate smaller container. If you have toppings that might make the lettuce soggy, just keep these separate as well.
Add a source of protein to your salad. (Each meal you eat should contain a source of protein) Typically pre-prepared chicken, chickpeas, left over steak, taco meat, or any shredded meat would be fine to put on top of a salad.

Bento Box Lunch
You can make your own bento box with any items of your choice. You can also use any container with multiple compartments or use smaller separate containers. The goal would be for your box to contain at least a protein source, a vegetable, and a source of fat. You can add hummus, or any dips that you would like for your foods but be wary of the carbohydrates in these food items.
Protein- Any Deli Meat, Hard boiled eggs, Salami, Prosciutto, Tuna or chicken salad, Beans, Little wraps with any of these proteins, Jerky, Cheese
Veggies- Carrots, celery, beans, snap peas, cucumber, bell peppers, snack peppers
Healthy Fat- any nuts or seeds, avocado, olives, coconut chips
Fruit- Lower-carb fruits like Raspberries, Blackberries, Strawberries, Plum, Clementine, Kiwi, Cherries, Blueberries, Cantaloupe
Putting together these items the night before means you can just grab your container, put it in a little cooler and you are good to go for a low-carb, healthy lunch, on the go!
